Flank Steak & Portabella Pinwheels

OK, so here goes my fav flank steak recipe.  It's a hit at our house, even with my kids:

Flank steak -- your choice and size
1 package of portabella mushrooms (should be 3 'shrooms)
1 package of bacon
W. Sauce to taste (can't pronounce or spell it)
Fresh-cracked peppercorn (I use a peppercorn medley of white, black and red) to taste
Fresh garlic to taste (don't really measure it -- more is better ;))
Basting oil or butter
Sea salt, garlic salt and pepper seasoning salt

Cook the bacon to nicely crispy, drain and let it cool.  Flatten out the flank steak so it's good and thin.  Wash and chop the 'shrooms (don't overdo it if using a processor).  Break up the bacon and mix all of the other ingredients together.  Spread it out on the flattened steak.  Roll the steak up (long-wise) and tie it up with cooking twine.  Smoke it at 225 until 140-142 internal temp (the "rest time" will take it up to 145).  Baste with oil/butter and apply seasoning salt to taste.  This will be relatively short so don't be afraid of a stronger smoke (I'll even risk mesquite on this one).  The portabella mixture will be very moist and keep the inside from drying out.  Goes very well with smoked corn on the cob, sweet potatoes or whatever.  Rest it for at least 30 minutes before cutting.
