Another flank steak recipe

Was thinking it's about time I posted another recipe and I heard request for more flank steak, so this is what my brain spewed out.

1 big flank steak
1 medium onion
1/4 lbs prosuitto
1 c sun dried tomatoes (the marinated kind in the jar)
1/4 c fresh chopped parsley
1/2 lbs goat cheese

Place the steak between 2 layers of plastic wrap. Pound it out thin with a mallet. Slice the onion and saute in a couple tablespoons of oilve oil till carmelized. Layer the prosciutto on the steak than spread the goat cheese. Layer over the surface with the sun dried tomato, onions and parsley. Roll the steak into a tube. Roll so the grain runs lenghtwise of the tube and secure with toothpicks.
 Season outside with salt and pepper. BBQ at 250 for about 4 hours.
 Remove toothpicks and cut into 2 inch wide slices. Serve with Wine reduction.

 Wine reduction:
4 c good red wine (merlot or pinot noir)
2 tbsp butter
1/4 c small diced shallot
2 cloves minced garlic
1 bay leaf
1 tsp dried thyme
salt and pepper

In a small sauce pan melt butter over med heat. add shallot and stir for about 3 minutes. Add garlic and stir for another minute. Add herbs and salt and pepper to taste. Pour in wine and let reduce by a little less than half.

Bear, sounds great, but you do not state in there when to drink the wine... :D

I will have to try this one out here as well, it does sound tasty...
