First of all.....THANKS to all who have given me advice and opinions on UDS building. Your advice has really shortened my learning curve! Now, as I wipe the brown off my nose, has anyone tried to work in a 2nd rack UDS while using a diffuser? I've found in my last 7 cooks, I really prefer a modified diffuser (deflector w/ holes), but now i'm eyeballing a 2nd rack. Is there any experience in this? I'm thinking about 6"-8" difference.

I don't use a diffuser, but I do run two racks on three of my four UDS's.
If you have a large separation between the diffuser and your rack, you will probably be thinking about splitting the difference to put the second rack below the current rack.
If you want to do this, I'd suggest taking out the bolts that hold the top rack in place, and using larger bolts for the bottom rack supports, you can then use a triangulation of cans, that have been opened both top and bottom, to provide the spacing, I use tomato sauce cans, but I'd really like to use the narrower taller Asparagus cans.
By removing both the top and the bottom, you get some chimney effect, that allows you fuller use of the top rack, while allowing the bottom and top to slip in and out without having to negotiate the wiggle past those bolts that used to support the top rack.

Never thought about the cans, nice touch! Do they need to be so far apart for the smoke and heat to move?

I just triangulate them so that the next rack that is going to go on top is supported as evenly as possible, you could go lower if you want but butts cook well with the room the sauce cans provide, but if you get 9 + lb butts it can get a little tight, that's the times I'd like the taller cans.
