Well I have finally got around to building my UDS I got from Josh last month.

I stopped by and saw this thing today, actually the first UDS I've seen in person. I love it! So simple yet so effective, I wanna build one or two now.

Have you cooked on that puppy yet?

If you struggle with getting it up to temperature, the chances are it's going to try and smoke backwoods, your exhaust vents are lower than your intake.

This often sucks air in the top and the intake vent becomes the exhaust, and with only a 1" pipe for the exhaust it chokes it out.

If you can't get past 150

Yes I have cooked on it.
The 3/4" pipe is the air intake the exhaust is the hole on top of the lid.
If any thing I have a hard time keeeping it below 300, in fact you can feel the air flow going into the pipe.
I have not found a problem yet with the intake being above the exhaust but will watch for any problem thanks.

How much charcoal are you starting with?

Do you have a charcoal basket  to keep the coals in one place?

On a 55 gallon drum, I need less than 1/2 a small chimney starter, (not a nice big Weber one), full of coals, on the 85 gallon drums I need just over 1/2 a small chimney starter to hit right at 250 when starting up.

Catch the heat as it rises, start small and build your heat slowly over 23 or 30 minutes, start capping things off as it goes past 200

I have only cooked on it one time so had a lot of smoke to star with before putting the chicken on.
Had to much wood in it also, did more reading on line and found out a lot of info that I will try out next cook.

Yes I do have a fire basket not sure the size about 10" -12" across & 10" high.
Had it littel over half full and put in to many hot coals and to much wood.

Next time I will start with only about 12 hot charcoal and one small chuck of wood.
Also found out about catching the temp on the way up insted of bring it down.

I have a lot to learn and looking forward to it.
Any help you or any one can give I thank you for.
