My Newest (and first) UDS for my NEW TEAM

Well, I know that I will get slammed for this, but...  I was going to make my own UDS, however due to a lack of time in my life, I decided to buy 2 instead.  I just got these custom made UDS's.  They have huge fire boxes and 2 cooking levels each.  I plan on doing my first cook next weekend.  If it works out well, I plan on being a rep for the guy that makes these.  We'll see... 

Please tell me what you think of the photos...

Are you running a diffuser since you have a lower rack? I like the firebox! Does he make them on the side for $$?

Well, I considered making a diffuser out of some perforated metal, but I am going to hold off until I see how it cooks... 

As for the 3 cooking levels, it's actually 2 with a 3rd rack to hold a water pan should I choose to put one it. 

The fire box does rock!  It can hold 1/2 bag of charcoal in it.  This should allow for a really long burn.  I have not discussed with him if he sells the fire boxes separate, but if you are interested, I can ask him.  I am sure he would love to sell as much as he can even if it is pieced out. 

As for the entire UDS, it is a little pricey, but the attention to detail and quality is outstanding.  He cut no corners and has excellent workmanship...  They go for $250 each.  I was hesitant at first, but when I started weighing out the "time is money" factor (driving to pick up pieces, shipping, searching for parts, etc) I figured I got a great deal.

If anyone is interested in buying one of these, or the firebox, etc, please let me know.

I found out that he will sell just the firebox for $39.00...

If anyone is interested, I can pick them up and bring them to BBQ events for delivery.

I learned a HUGE lesson cooking on my UDS today...  Don't trust the thermometer.  I could not figure out why the temp would not go above 200 degrees...  Then I found that after only about 2 hours, all my meat was turned into charcoal.  Eventually the thermometer went to 150 degrees.  I threw a probe thermometer into the grill along with 2 other thermometers and found my temps was actually 260 degrees even though the one I was using to cook with still showed 150...  THAT SUCKED!!!  I will do round 2 of cooking next weekend (with a new thermometer) and re-post.

Unfortunatly the best lessons learned are the ones that are the most damaging.
$250 is a steal of a deal. I just built mine but after sandblasting, buying a new grill, paint and hardware, there's not much their for labour. I'll have to see about streamlining it a bit to see what I can build it for vs. what folks are willing to buy it for.

I would be interested in getting your friend to make one of these for me. I had to replace my offset smoker and the new ones you get at Home Depot are pretty much crap. Can you let me know how to get in touch with you or your buddy?

Real Job???  I feel like I have 3 now... My #1 which you know what i do...  #2 I teach at College of the desert... #3 I just started Golden Ticket Catering and BBQ...  Oh yeah.  In the mean time I have 3 daughters, a great wife, and I like to try to BBQ whenever I can. Life is very busy!  I would like to take you up on those beers.  I will be home brewing soon.  Maybe we can tap my kegerator after the ferment.
