From the "serious wood-fired expert" chef at Bobby-Q, I learned that you should use green wood or soak it in water for 3 hours...and oh yeah, keep your cooker temp below 200. ??? 8)

I'm confused. 1st he says "Use a thermometer to check the smoke's heat; heat should be less than 200 degrees."

Then he's nice enough to share a recipe that states "Preheat smoker to 250 degrees using applewood."

How do you get to 250 by staying under 200?

I think the sopping wet wood brings the temp down. :laugh:
