I agree with Erin. In a perfect world, a BBQ joint could cook X amount of food and stay open until they sell out each day. It only works with those who have built up a reputation to deserve the lines. But in a perfect world you need to be open at optimal times when your dining crowd is a crowd. It doesn't make fiscal sense to keep a place open when there not enough customers to warrant the crew, utilities, etc. Both business and customers seek a happy medium. I'd say David is doing a darn fit job of striking it just right in Anthem.
