I asked Mr. Mueller of Louie Mueller Barbecue, in Taylor, Texas, why his homemade peach cobbler is made with canned peaches year-round, despite the fact that peaches grow nearly all year long in Texas. All he could offer was that his customers would recognize the change in taste and raise hell.

Consistency is everything.   Ever wonder why Ted's Hot Dogs looks the same exact way it did when it gloriously opened about a mile from me growing up?  Consistency.  In culinary school a couple of statements stuck in my mind.  One is that if you are busy and killing it, don't change a damn thing.

Consistency is why they designed the Big Mac with no tomatoes.  They could control the quality of all the other ingredients but the tomatoes varied from region to region and season to season.  So you will always know that when you order the Big Mac you are going to get a consistent sandwich.  Consistency does not necessarily mean good.
