Post by: DVA on January 18, 2013, 07:29:18 pm: I have two new ones and an older one that is larger. The larger cooker has 20x20 cooking grates with room for 8 racks spaced just over 3 inches apart.

I have never entered a competition but have cooked for over 150 people on two separate occasions. I like building smokers and have never had the serious itch to enter a competition, although that may change some day.

The lower portion is filled with charcoal and wood and it will burn for up to 16-20 hours without tending the fire. It is best to add an electronic controller like a BBQ Guru or like controller so you can just set-it-and-forget-it as the Ronco man would say.
