Three Bean Bake

This serves about 6

1/4 pound bacon
1 large onion, red or white
1/2 cup molasses
1/2 chilli sauce
1/2 ketchup
2 tablespoon cider vinegar
1 10-oz pkg of frozen lima beans
1 16-oz jar or can of favorite baked beans
1 16-oz can red kidney beans, drained(dark or light red, doesn't matter)
Pepper to taste

In a medium skillet or fry pan, saute the bacon over medium heat until lightly browned, stirring occasionally; drain on paper towels, reserving bacon drippings in the skillet.  When bacon is cool, tear into pieces(whatever size you would like), then set aside.

Add the onion to the drippings in the skillet and cook over med heat until transparent, (few minutes), then stir in molasses, chilli sauce, ketchu and vinegar; bring to a boil, reduce heat, and simmer for about 5 minutes, stirring occasionally.

Place all ingredients in a casserole dish with a lid in a pre-heated oven @ 375 degrees for 30 min til bubbly, remove cover and continue to bake another 15 min.  Allow to cool for a few and serve.

Sounds tasty.  I think we need to do a side bean category at our next cook-off.  There are just so many tasty ways to make them.
