Tea smoked duck

For the duck:

1 duck, trim up the excess fat
1/4 c dry sherry
2 tbsp soy
1 tbsp honey
2 green onions rough chopped
2 star anise ground
1 tsp fresh ground pepper


For the smoking packet:

2 c black tea leaves
5 tbsp uncooked rice (any ol kind)
3 tbsp brown sugar
1 green onion roughly chopped
1/3 tsp ground coriander seeds



 Remove neck and giblets and save for catfish bait, or use with some miroux pioux in a saucepan to maker a stock for a sauce later. Stocks keep well in the freezer. Wash and dry it good. Poke a bunch of holes in the skin with a fork. Tie up the wing and legs(truss) with some butchers twine.

In a small bowl combine sherry, salt, ginger, green onions, star anise, and pepper. Place duck in a gallon ziplock bag. Add marinade. Toss that bird around good to make sure it gets a good coating. Close bag and marinate in refrigerator 6 to 8 hours or overnight.

 For the smoking packet put the tea, rice, and brown sugar on heavy-duty aluminium foil and fold it up into a packet, making some holes for the smoke to get out.

Remove marinated duck from bag, pat dry.  Place duck, breast side up on the grill. This will be a hot cook, yer gunna want the cooker at about 325.  Place the smoking packet on the fire. Put on a grill indirect or in an oven at like 450-500 for about 5-10 minutes at the end to crisp up the skin.

Q the duck till the thigh hits 180. Use a therm or shake hands witrh it. Meaning that the drumstick should feel loose in the socket. Smoke may not last the entire cooking time, but will be sufficient to flavour the bird.
