Southwestern Chipotle Baked Beans


3 Canned chipotles in adobo, stems removed, chopped
2 ts New Mexican chile powder
2 tb Adobo sauce
1 lg Onion, chopped
2 Cloves garlic, chopped
1 tb Vegetable oil
1/4 lb Slab bacon, cut into 1/2 inch pieces
1/2 c Ketchup
1/2 c Beer or water
1/4 c Dark brown sugar
1 t Dry mustard
3 c Cooked great northern beans

Saute chipotles, onion, and garlic in oil until soft. Combine with other ingredients, and mix resulting sauce into the beans.

  325 degrees for 2 hours, adding water if beans get too dry or at 225 - 250 for 4 hours or until done

Wow, that sounds tasty, especially like the 1/2 can of beer.  You know it's got to be good if you have to cook with Beer...  :o  ;D
