Decided to take a trip to the mid east for recipe of the day.
Marinade:
2 lbs meat (lamb, beef, or chicken)
2 cloves chopped garlic
2 tsp. chopped ginger
juice of one lemon
1/4 c extra virgin olive oil
1/2 tsp tumeric
1/2 tsp. ground corriander
1/2 tsp. cumin
2 tbsp chopped fresh oregano
1 tbsp salt
1 tsp fresh pepper
cut meat into one inch cubes or 1/4 inch slices. Place in a one gallon zip lock and pour in marinade. Work the mixture well to coat everything thoroughly. Let marinate in fridge for 4-24 hours. The longer the better. Place meat on skewers and grill.
Serve with yogurt sauce.
Yogurt sauce:
1/2 c. tahini
2 c. plain yogurt
juice of one lemon
2 tbsp EVOO
2 finely chopped garlic cloves
1/4 finely chopped onion (about 1/4 of a medium onion)
salt and pepper to taste.
Mix all ingredients in a bowl, wrap and refrigerate for 2 hours.
Serving ideas are warm pita bread, basmati rice, olive/tomato/feta salad, baba ganough, hummus
