Leftover pork....what to do??

So after my teamies and I cooked for 260 people for my sisters and her husbands house party I had some leftover pulled pork.  So now what to do this time....had some leftover killer beans that teamate Kristine makes and decided to mix the whole lot together, add some salsa verde, chopped tomatoes, sour cream, cheese and a few drops of Tapatio and flopped into warmed up tortilla.......HHHHHHHHHHMMMMMmmmmmmmmmm good eats Aunt BEE!!

Speaking of tortillas and pulled pork... I like making pork (whether it is pulled, chopped, sliced or diced) enchiladas.  I just use my favorite chicken enchilada recipe and substitute the pork.  The smokiness from the pork is awesome and really adds a great flavor to the mix.  Dang, now I'm hungry!!   ;D :o

First off if you need pics I can do it the next time I use my left over pulled pork. I have a round cast iron skillet that holds 10" tortillas perfectly. I butter the bottom of the tortillas slightly and while that is browning on the bottom I spread BBQ sauce. Add pulled pork, onions, bell peppers, jalapenos (pickled), Diced fine, Cover with 4 blend Mexican cheese, few splashes of Smoked Chipotle Tabasco sauce then throw under the broiler to melt and cook the Pork Mexican Tortilla Pizza.

PS I don't know what spell check is used here but I had to make 3 trips to the fridge to spell Chipotle right. LOL

We made home made pizza last night. I suggested using a cup of the leftover PP and some Q sauce I had modified on half of the pizza. Older stepson Joe mixed some of the habanero salsa from Rock Springs Cafe in with the Q sauce, and half the pizza was Pulled Pork/Salsa/Q sauce pizza. This stuff could cause a stampede!    :P



The lighter piece is normal pizza. It was pizza.
