Title: I made an awesome mop!
Post by: hillbille on April 16, 2010, 06:26:43 pm
This should get your creative juices flowing:
   TANGERINE MARMALADE MOP

2 parts marmalade
ditto mustard
 1"ish" part of hot sauce
ditto A/C vinegar

I used this on some  meaty spareribs  I found at Ralph's last week..  Using no rub, I slathered it on and put bone side down for 3 hours, flipped them, then again after an hour.  Periodic "moppings" throughout the smoke, w/ temps hovering around225 at top of the  kettle and 200 at grill surface.  I kicked it up a notch at the end.

A sprinkle of Zatarain's Creole Seasoning and the gobbling began!

I feel like I have gone through a time portal or something , and have a new apreciation for BBQ.

Sorry for lack of pics, but the marmalade really carmelizes well, with the bits of peel giving a depth to the bark  that's  just pure awesomeness.

Recipe ingredients aren't exact and the marmalade was homemade, and since we have  alot of it, I figured I'd use it instead of honey.  I'm glad I did.

Hmmm... NO comments?  Either this is a serious blunder , got lost in the fray, or y'all are secretly plotting to make your own marmalade mop and don't want to spill the beans ;D  I have to say it tastes great.

Sounds great! I'm going to have to try this out sometime. I bet it would be good with chicken or a pork roast...

I was worried, as I did a site search for marmalade and came up empty.

The recipe I gave out is pretty much it- except for the type of hotsauce, mustard, and vinegar,  and the  marmalade recipe, you know everything I know.
The proportions are accurate and seemed to work quite well.

I think I'm starting to get the hang of  slow smoking.

It sounds tasty. I've done similar sauces in a game I'd play by myself at the 99 Cents Only store. Buy three things: one sweet, one sour and one hot...or something salty like soy sauce, worchestershire sauce, steak marinade...or  a fresh veggie like a package of jalapenos or cilantro. My self-imposed rule is that I can't exceed three and that I have to mix the entire contents of all three together. I've come up with some distinctively tasty combos such as mango jam/chipotle en adobo/pineapple vinegar...frozen Paradise Punch concentrate/jar of pickled turkish chiles/fresh cilantro. :P The fun thing is if the stuff turns out toxic, I'm only out 3 bucks. :-X :D
