I have about 2-3 lbs of brisket left over this weekend, uncut, but i'd like to make burnt ends out of it. I know how to do it when it's fresh, but can I freeze it for later? Should I freeze it uncut or cube it up first? Is there any special way to thaw it out to keep some bark in-tact? Should it EVEN BE frozen? Thx!!

ya know we freeze it with brisket juice in a vacuum seal bags and it comes out great just defrost it and heat it up in microwave or pot full of water.

agree with the vacuum sealing of the meat before freezing. we normally would reheat in water that was brought to a boil and then put the vacuum sealed bag with the meat in the pot and simmer for 10-15 minutes for thawed meat and around twenty or so for frozen.
whether or not to cube is a personal choice. but if i still needed to make the burned ends, i would wait to cube till i was ready to cook them.
