Lobel's Butcher Shop in NYC says under 1 1/2" thick, grill over direct heat; thicker cuts over indirect. Broil, pan grill or braise. Cube up for kabobs, strips for stir fries and satays.
I recommend seasoning with Dizzy Pig Red Eye Express, or Plowboys Bovine Bold. Come and get it!
