So, what's everyone planning on cooking up for Easter?  Is anything going on your Smoker or BBQ?

We are taking it easy this year.  Since we are going down to Tucson for the Brisket & Sauce Comp at The Hog Pit Smokehouse, I am surprising my folks with a weekend mini vacation at our Club Sponsor down there, the J.W. Marriott Starr Pass Resort.  They have an amazing Easter Brunch on Sunday.

This is the first year I am not cooking for Easter, but I am really excited about our Brunch and looking forward to it.

What are your plans or recipes??

Had a great day off to celebrate Easter.  ;D  The Family enjoyed a great morning church service out in the desert to remind us of why we celebrate easter.  After the service we had a pot luck brunch at a friends house and I brought about 6 pounds of pulled pork for our potluck.  I was basically mugged at the door.   :D

I enjoyed some homemade Hummus and a great scrambled eggs mixture.

For dinner tonight I cooked a spiral cut ham with a mustard/brown sugar and ginger snap coating, cheesy hash brown, maple carrots.  A couple of glasses of wine and great family to share it with.  Life is good.

Happy Easter to all and God Bless.
