Bear's bacon/cheddar tater salad

Here is my recipe of the day. Hope ya like it.
 
1/2 inch cubed red taters with skin on and cooked al dente, bout 2 lbs
1/2 cup sour cream
1/2 cup mayo
1/4 cup Jack daniels mustard
couple chopped hard boiled eggs
1 chopped sweet onion (maui, vidalia type)
2 cloves chopped garlic
2 tbsp paprika
1 teaspoon celery seed
1/2 teaspoon tabasco
1/4 c fresh chopped dill
1/2 pound bacon diced and cooked crisp
1 cup shredded cheddar cheese
salt and pepper to taste

Put in a bowl and fold it all in.

Now that does sound tasty.   Had I had more time, I would have made that up for today's Superbowl Party....

DDog strikes again, did you start from the 1st posts and work backwards??

However, this does sound good and I do have a Packer, 2 butts  and soon two racks of ribs and chix thighs on for today.

Man Bear that sounds very good gonna have to give this one a run. Im the only one that eats potato salad in my family they just dont know whats good.

 One thing i have done a little differently is I get the box of "bits and pieces" bacon at wally world. Lots of large pieces and thick pieces. I also like the meat to fat ratio in these packs. I just use a cheap wire mesh veggie, grillin sheet from wally world and load it up, then toss in the smoker till it's done.

Thanks for the hint Bear on the bacon ends.  I pick them up from Smart & Final, but smoking them will add a different level.

They are great to have on hand, when you want to add chopped bacon, but don't want to use the good stuff.  Save that for Bacon Weaves and ABT's
