Beans anyone?

Does anyone have a real good bean dish completely from scratch?  No offense, but I don' want some recipe for some suped up can of baked beans.  Thanks.

Once you get the beans right, and I can help.  But, I cheat, cause I can't seeme to get the dried beans to the right texture.  I use the baked beans and drain off the batch.  Then I go to town.

Give this one a try. We use it here at the restaurant and it's a hit. This makes a huge amount. You may want to cut the amounts by at least half or into thirds.

3 - #10 cans pinto beans
6 - 10oz Rot'els
6 - 4oz cans diced chilis
3 - Cups diced onions
3 Tblsp chopped garlic
2 - Cups bacon bits
6 bottle Modelo Negro
1-1/2 Cups chopped Cilantro
Lime Wedges

In a large pot over high heat combine all ingredients except the Cilantro and lime wedges. Bring to a boil and reduce heat to medium low and simmer for 20 minutes. At the end add Cilantro and serve with the lime wedges.

Here's a recipe for pinto beans from Black's BBQ in Lockhart, TX.

1# dried pinto Beans
1/4 # salt pork, chopped
1 tsp freshly ground black pepper
2 tsp paprika ( I use smoked)
2 tsp salt
1 tsp chili powder ( I use Williams Chili Seasoning)
1 fresh jalapeno, chopped ( My own add in)

Place dried beans in crockpot and cover with water. Stir in remaining ingredients and cook on high for 5 hrs or low for 6 to 7 hrs.

1# Dried Pinto Beans
1 tsp. Sea Salt
1 tsp. Black Pepper
1/2 # Diced Double Smoked Ham
1/4 Cup Brown Sugar
1 Small Can Tomato Sauce
Chili Powder To Taste


Clean and wash beans
Put in pan, fill with water & bring to a rolling boil (You don't have to soak these because you fill the bean pot with boiling water when it needs water)
Boil till nearly done
Add remaining ingredients & cook till done
