Here's one I did for a friends dinner party that was a huge hit:

Smoked Pears w/ Pomegranate/Raspberry Compote:

To make the compote:

Reduce 2 cups of pomegranate juice down by half over low heat. Do not let it boil or it will burn the sugar in the juice.

Add 2 cups of Red and Black Raspberries, for 4 total (I used frozen).

Add about 1/3 cup of turbinado sugar, 1 1/2 tsp of Vanilla Extract, 1/2 tsp of ground cloves and 1/2 tsp of ground ginger.

Continue cooking down over low heat for about 2 hours or until the mixture is very thick.

Set aside until the pears are done.

Smoke some Bosc pears at 350* for about 20 minutes.

Take off the cooker, cut in half and core out the center with a spoon.

Add the compote mixture to the center of the pear.

Take some melted white chocolate and drizzled it over the compote and sprinkle the pear with toasted chopped hazlenuts.

Here's another one I did for my friends dinner party that blew every one away:

No Mayo Deviled Eggs w/ Smoked Apple and Chipotle:

Smoke a small, crisp apple (Gravensteins are in season right now) at 350* for 5 to 10 minutes. Don't let it get soft.

Also smoke a few jalepeno's along with it to turn them into chipotle's.

Boil a dozen eggs and prep for deviled eggs.

To the yolks, add, 1/4 cup of peppercorn ranch dressing, 2 table spoons of dijon mustard, 2 table spoons of sour cream, and about a table spoon of bread and butter pickle juice. Mix well.

Once it is creamy, add the finely chopped smoked apple and chipotle's and mix again until mixture is evenly incorporated.

Pipe mixture into into the eggs and enjoy!!!
