 Cooked these up yesterday. I got a brisket too. Put them on at 12am last night. One is already resting in foil, the other half is at about 180 now and wrapped to finish to 195 before pulling it out.

Can you tell me how to view the pictures of what you cooked?  It sounds great!  Do you wrap briskets in foil when they get to 180, then cook until 195?  Then rest them for a while?  Let me know if you could.

Jay,

That's how I do it, smoke it until it gets to 180, then I foil it until it gets to 195, then I put it in a dry cooler for about an hour, then I slice and serve...

Take some pictures when you cook some and post them on here for us all to enjoy  :D

Thanks for the tip.  I'll post pictures as soon as I smoke some meat.  Probably this weekend.

 Here's the brisket. I cooked it till 195 and double wrapped in foil and let it rest an hour. Came out tender and moist. Before dinner time, we shared a bowl of cut burnt ends.
