For me, beer is a given! Ha! But seriously, I've got a pork butt in the freezer, I'll probably pick up a brisket and maybe some ribs too.  I consider that the BBQ trifecta.  I think after the class at BBQ Island, I'm just in a hurry to get one of each under my belt. (But, mostly above, and hanging over the buckle of my belt!)

I'm not sure yet, but you guys are killing me here with your ideas. My wife and I just went thru the porn files here and the ideas are insane. I have just a small smoker/griller, can barely make enough for dinner right now. But looking at maybe a brisket. I'm dying to try some of the ideas here though.

The 3rd, I will do some ribs, but that's it on the pit.  I wote on another thread I was going to do the low country boil on the 4th.  I have the king crab already, ordered up some Maryland blue crabs that will be flown in on the 3rd, will be getting some shrimp, clams, corn, sausage, onions, potatoes, garlic, etc closer to the end of the week.  My 80 quart pot is going to be working over time on Saturday.

I will get some pics up as soon as I can on Sunday morning or afternoon.  It's gonna be great!

Making beef stroganoff as a special for the weekend. Using some scalper and sterling silver ribeye and NY strip along with the ends and chain form tenderloin for the meat in the recipe (sterling silver is at the top end of prime grade by the way).
Also running an herb crusted filet minion for the steak till that runs out and will run a horseradish/ garlic crusted rib eye.
Talking about doing a pork loin roulade with smoked gouda and apple filling or possibly some type of fatty. Have a couple days to work on the fish special.

3 briskets, 10 racks of ribs and about 4 dozen chicken thighs.
Potatoes, Beans, Pasta Salad, stuffed mushrooms.

There will be some other vegetarian stuff, but I don't concern myself with the vegetarian dishes.
