Title: Todays Tri Tip

For my first time I'm very happy and the company was even happier. If this works right here are the pics.

Looks beautiful!!! maybe after I pay for my smoker..., my wife will let me get a meat slicer  :)

Great job Jerry, looks like it was a success. Looking at the beginning product the two pieces of meat came from different steers as one had superior marbling over the other. I will bet they each had a different flavor and texture. Which one did you like better or did you notice a difference?

I find it funny that for years the bottom sirloin only had one purpose to make hamburger or stew meat yet a creative butcher saw this small muscle, (Tensor fasciae latae), with its fat veins and decided to cut it out and treat it as a steak as it has incredible flavor. The not so funny part is now it commands a premium price for what we used to get as hamburger.

They were a big BIG hit. They were making sliders 3 at a time to eat. I will definitely be cooking it again in the future. I made a chipotle mayo for spread and grilled some onions. Just wish it wasn't so expensive.

at what internal temp did you take them out of the smoker

I wanted to at about 120 and move to the grill but it was 127 and 130 before I knew it. After the grill it was close to medium and I was shooting for medium rare. Good all the same.

Jerry try some havarti cheese on your sliders next time. My sliders I cooked at eggfest had chipolte mayo, havarti cheese and it went over good.

Looks great!  :P I need to get another meat slicer. I had one for decades and then a part broke that I couldn't find a replacement for. What kind does everyone like these days?

Greatr looking Tri Tips, congrats on a great smoke. What was your choice of wood? Did it actually come trimmed like that? I always have to trim mine, maybe that's why they're cheaper. It's all good my friend.

I didn't trim anything off it. Came from Costco just like that. I use hickory pellets on the Traeger.
