Just prepping for competition at this point. Getting temps and times down with the little WSM, tweaking recipes...

This is a pic of the ribs from last weekend, officially the best ribs I've ever had. Get ready, competitors!

(BTW, is there a list of the upcoming competitions on here somewhere?)

Quiggs, thanks--I didn't know if those were events specific to the forum (members/organization) or included more than competitions or only certain kinds of competitions or what.

Scott, thanks! They were the bomb. Sauce would have been an insult... And thanks for the clearer answer on where to find upcoming competitions. Now, I know they both exist/co-exist, but what is the difference between the BCS and KCBS?

KCBS is a national organization with around 7-8k teams that will compete in one or more contests.  BCS is an AZ organization associated with this site.  Both sanctioning bodies are recognized by the American Royal and The Jack.  They both have the same 4 categories and turn ins are all done in the same boxes although garnish is slightly different.  KCBS has a 30 minute turn in window while BCS has a 45 minute turn in window.  I think you will find most of us have competed in both sanctioning bodies.  There are pros and cons to both organizations.

They look really good, nice color. 

For competition, I would highly suggest saucing your ribs though.  Experience, and hearing other accounts of what works and what doesn't work in competition, makes it fairly apparent that unsauced ribs do not usually do well.   

This is just my opinion though...and I also prefer my eating ribs un-sauced.  Our competition ribs get sauced, always.

On another note, you may consider competing in the upcoming Scottsdale KCBS competition.  There is no entry fee, something that is not only awesome but also virtually non-existent in the world of competition BBQ.

Scott--thanks again for the very informative response(s)!

Crash--Of course, I would do whatever the competition required. I was only speaking as the personal legal representative of my ribs... ;) On the Scottsdale competition, I'll be working with my friend Tracy from BBQ Phoenix. My team won't be ready for 3-6 months, mostly due to costs for the necessary equipment.

For KCBS events you can go to their site and click events.  At this time, there are not any planned BCS events.
