Pics coming later, but apparently, the pulled pork was pretty good. Tiara went back for large tastes 4 or 5 times. She doesn't like pulled pork. Ribs are coming off now. And then I'm leaving for Tempe.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Pitchers.

The Butt. I had to tear into it. Kinda overmoist. UDS apparently cooks moistly. More moister. Gooder!

I painted on some SBR original mixed with rice vinegar, water, and, uh, oh raw honey. Tasted kind of odd. But good.

I didn't get to taste the brisket until after I got home tonight. Good thing, or I wouldn't have shown up. All rational thought flew out of my head. It was kind of dense and heavy, but moist, beefy and delicious! Manna, it was! Freaking fantastic!!

I must go fall over now. Very tired. Too tired.

People don't realize how much hard work BBQ is.  Granite it isn't a Triathlon, but all of the 12 ounce curls and sitting by the smoker all day takes it out of you.

Very nice looking stuff!!  Glad to hear it was tasty!

Great looking meats there Dave. I too have pics I will post of mine. And I understand the part.. "if I had tasted it before I would not have gone at all." Once we finished our ribs here we gorged on them and were so full and content that we actually considered not going to the MDA. It took a big effort to get up and go. But in the end, we are so glad we went too. Glad you finally got to get some of that wonderful looking meat and the family didnt eat it all up before you could.

So true, so true...even with a so called "set and forget" smoker like the UDS it still takes a lot of time and effort to make good BBQ.  I check the smoker at least every hour of an all night cook, even if it has been running steady for hours...I still check.   I would probably be the only one to constantly check on the smoker, even if I was cooking on a pellet pooper... :D :D  ;)

Twas too dark to get a decent photo while I was viable, and by the time the sun was up, I was too wobbly. Bleah! Now I have to corrosion control the outside, and paint.. And clean the offset insides, paint the outside. And build a ramada!!
