Hey I am from Oklahoma but was in Jackson, Ms and traveled all of Louisiana for six years selling animal health products.
I really got to know a bunch of Cajun Cattlemen and Dairymen as the Boot of LA is the dairy belt.
they really got hurt in Katrina!!! big time.

My wife is from Magee, MS and her daughter and family are in Baton Rouge.

Are you from LA?????

I love Cajun country. I had a casino client on the Bayou Teche just outside of Lafayette. It was run by the Chitimacha tribe, which due to a couple of centuries of assimilation was all Cajuns with French last names. Boy, can they cook! (and drink!) I hung out with the tribal chairman (whom they called Chief) and watched him cook. He taught me a lot about making gumbo, macque choux, crawfish pie, jambalaya, etc. I'm getting hungry just thinking about it! Mebbe we should consider "Laissez Les Bon Temps Roulez" (let the good times roll)  at a Cajun cookout next Mardi Gras.  O0 >:D ;D

hey, i am from La. born and rasied in Baton Roug and its the  best place to grow up, country to the bone. we should get togather and cook some cajun food , i can make it all ,my mama taught me how to cook but i dont cook  New Orleans style, we dont use tomatoes in our dishes like they do , but ill give ya a run for your money with Baton Rouge southern style cooking Gumbo, jambalaya, crawfish etoufee,crawfish bisques,chicken sauce piquant,fried crawfish tails, good old fried catfish and hush puppys baby it dont get no better than that. I got some beads too, the glass ones are the ones u want but ya gotta show somthing to get thoughs. hahah lol   iv been to Jackson MS too, i just love all of it down there ,so differnt down ther ,way slooower for sure i miss that pace of life for sure. we are gonna go threw La. and visit on our way back from the Jack Danials in oct. i cant wait looking forward to being there.Let me know if you want me to bring something back for you. where are you ? i think you said you were way south wilcox area? my mom and Dad live in Pearce AZ.  Yes katrina was devasting for La. i was in shock when that happened, i just couldnt belive it. They will rebuild it all thats just how La. peps are,very proud of were we come from.well i really enjoyed this conversation with you and hope to have many more on this subject azchoctaw. Do you have choctaw indian in you? my grandmother was choctaw indian. Looking forward to hearing from you again.  ;D

Speaking of Crawfish, where does anyone find these tasty little devils??  I used to catch them in a creek when I was kid, but am a little hesitant to try that now.  I have been jonsing for a crawfish boil for a while now.  I used to go to a place at 24th street and Camelback, but I don't know if they are even still there.  I am willing to get this fix any way I can, have someone else do the cooking or Me, it doesn't matter!!!

You're talking about Baby K's at 20th Street & Camelback. They still do crawfish boils when they are in season. Camp Verde also holds crawfish boils a time or two throughout the year. They are tough to find live around town, unless you catch them in your neighborhood canal. Wal-mart usually has whole body boiled crawfish, although the fat in the thawed heads tastes rancid to me compared to sucking it out of the fresh ones. You can also buy frozen crawfish tails at the Ranch Market at the Chinese Cultural Center on 44th Street.

If you're ever in Rim Country or the White Mt.s toss out a crawdad trap baited with fish for a few hours.  You'll clean house on them mudbugs.  We caught a bunch at Horseshoe Cienega and Big Bear Lake in May....and damn were they good.

Years ago, I was at Hawley Lake with a dozen friends. We passed the time catching mudbugs by letting them clamp onto a baited line. By day's end, we had a bucketful of the little buggers and put them in fresh water with a little cornmeal to help purge them. I wake up the next morning to find the bucket empty. It seems that a "Good Samaritan" in the group took pity and released them back into the lake. Boy was I steamed (unlike the crawfish).  >:(

I believe the Ragin' Cajun has bit the dust. No listings of them anymore.

While I was driving a truck, I happened to stop at this place in LA. I dont remember, but I ordered the crawfish etoufee (sp) It was the best thing I had ever eaten. Since then, I have never been able to find it again. Nor have I been able to find the recipe for such a good plate of food. As for cajun, If your inviting... LOL. That or just send me a great recipe for this. LOL

MIKE, Thats a big yes for a cajun cook! wev'e been cookin cajun and southern food most of our lives! Since we heat with wood stoves up here, we like to cook our beef or chicken stock over night the 1st night then strain and cook our gumbo the next night all on the wood stove every winter! i grew up not only with family recipe's but i watched JUSTIN WILSON on pbs for years! i was always a big fan of PAUL PREDOHME also!

ROB, We use to get crawfish ettoufee on fried catfish at MULATES in LAFAYETTE and it was great! Also my uncle JOHN comes up here every fall to squirrel hunt and we make squirrel ettoufee - it's basically fried squirrel with ettoufee sauce( ettoufee means "to smother") i have family recipes if you need them!PAT

I've never eaten squirrel, but I've been to Mulates in Breaux Bridge. In season, they serve crawfish by the crateload. Lots of dancing with everyone on the floor from kids to grandparents and musicians from ages 15 to 75 playing together. A real feel good place. www.mulates.com
Another favorite is Prejeans in Lafayette. They have some nice recipes on their site. www.prejeans.com

Our family loves to hunt pretty much anything...as long as we can eat it.  Squirrels are one fun creature to harvest and eat....but damn are they fast.

I like the Squirrel Militia club idea...very solid!!!   We had what we called "Squirrel Olympics" back in the college days....and damn was it fun, but probably not exactly safe.

I say we try to put a dent in the population, we'd love to travel up there to meet ya'll.

You'll definitely have to show us that squirrel ettoufee recipe.

Oh yeah, and early October is when them big dawgs are biting just before ice-over.  Got any ideas??

Where is the Walmart that carries Craw Dad tails, we love it in a Rotela Dip over a slow fire.

Hey Pat I love Justin Wilson too, by the way he is the son of the longest acting Louisiana Department of Agriculture Director. He is farm boy.
I liked his shows always had a little wine to smooth the taste.

I am really starting to miss LA.
My Becky just got back from Baton Rouge after 9wks and she is going to be a GAN GAN again. Southern for Grandma for you Northern folks.

I last saw the crawfish at a Wal-mart on Hwy 69 in Prescott. But I assume (and you know what happens when you assume) that most Wal-marts carry them in their "fresh" seafood counter. In the Ranch Market at the Chinese Cultural Center, they sell cooked & peeled crawfish tails in frozen 1 lb. bricks. I believe they are from China. I can't look at them without thinking about when a new chef at my Cajun casino client dared to suggest they use them in their restaurant to save a buck. The Cajun/Chitimacha Indian owners are sticklers for authenticity and fired him on the spot.

They also have other restaurants on the premises, including Mr. Lester's-- the best steakhouse I've ever been. It was named after the oldest tribal member who was pushing 100. They added a big bar next to Mr. Lester's and were looking for a name. I suggested Mo' Lester's, but they didn't buy it.  ;D  They have killer martinis...when you drink them, it feels like they are being administered via an I.V. You see the little ice crystals shimmring down...brings a tear to my eye and a drool to my lip just thinking about them.  :P

Rajun Cajun se muere. It's been gone quite a while. I heard something about them trying to relocate, but I haven't found them. I think VooDoo Daddy's is still in PV, and one other location?? but I'm not sure how authentic they are. I work w/a guy from LA, and he'll drive from 56th St. and Washington to Pappadeaux to gather food. He says it's that good.

I think that's where Alton Brown stopped in N.O. during Feasting on Asphalt II: The River Run. They were provided folding tables and service out front; I don't remember if they wouldn't let cameras in, or if it was that busy, or why, but they--the restaurant--catered to the whole crew outside. He raved!
Nothing says we have to wait for February. We'll just declare Cajun Day at our own leisure!!

I've never been to Pappadeaux. It is owned by Pappas Bros. a chain with a few different concepts out of Dallas. I too have heard that it is good. Voodoo Daddy's is closed in PV. Even though I live a couple of miles away, I only went once. Nothing special, except for serving Turbo Dog.

I was at Wal-mart today and saw Boudreaux's crawfish tails (product of China!) $6.78 for a frozen 12oz. package. At World Market I saw party size bags of Zapp's Cajun Crawtator chips for $2.99.  :P

as for the tails that's 4 times more money/lb than American Beef.

Lizard we've done a couple boils and I order mine from LA online.  They direct ship to your door next day live in a sack.  I usually buy 40 lbs....

I went to Fart and Spinal--smart and final--for their charcoal. They had a BIG bag of crawdad tails. I didn't look at the price. I think they had some other crawfish product, too. And there's a few of them around. S n F, that is.

I think it was the travel channel that had a show about off strip restaurants in Vegas.  There was one that has their crawdads flown in daily, and the place was full of patrons enjoying what looked like delicious little critters.  Vegas taxi drivers probably know the place, I can't remember the name.

I just got done boiling about fifteen pounds of live crawfish caught up here out of Caterack lake near Williams.  They were just what I remember!  Alot of work, but well worth the effort.  My brother and I had a trap and a Spiderman fishing pole with a piece of hotdog on the end.  I haven't had that this much fun since I was kid.  We took turns pulling out crawfish that would grab on to the hotdog and pull them out.  It was a BLAST.  I will be doing it again soon.

The added benefit is that you're helping the ecology of the lake. AZ Game & Fish consider mudbugs to be a nuisance that competes with fish. They're happy if you catch and eat all you can. :P 'm happy to oblige them as well.  ;)

I too know that you are supposed to keep all you catch, but never understood why.  Sure they say it is  because they are not native, but the lakes they "created", are native anyway.  What difference does it make.  I think in this state we have like one or two "Native" lakes anyhow, everything else is a dammed up river  or wash.  Who knows.....
