Hey I am from Oklahoma but was in Jackson, Ms and traveled all of Louisiana for six years selling animal health products.
I really got to know a bunch of Cajun Cattlemen and Dairymen as the Boot of LA is the dairy belt.
they really got hurt in Katrina!!! big time.

My wife is from Magee, MS and her daughter and family are in Baton Rouge.

Are you from LA?????

I love Cajun country. I had a casino client on the Bayou Teche just outside of Lafayette. It was run by the Chitimacha tribe, which due to a couple of centuries of assimilation was all Cajuns with French last names. Boy, can they cook! (and drink!) I hung out with the tribal chairman (whom they called Chief) and watched him cook. He taught me a lot about making gumbo, macque choux, crawfish pie, jambalaya, etc. I'm getting hungry just thinking about it! Mebbe we should consider "Laissez Les Bon Temps Roulez" (let the good times roll)  at a Cajun cookout next Mardi Gras.  O0 >:D ;D

hey, i am from La. born and rasied in Baton Roug and its the  best place to grow up, country to the bone. we should get togather and cook some cajun food , i can make it all ,my mama taught me how to cook but i dont cook  New Orleans style, we dont use tomatoes in our dishes like they do , but ill give ya a run for your money with Baton Rouge southern style cooking Gumbo, jambalaya, crawfish etoufee,crawfish bisques,chicken sauce piquant,fried crawfish tails, good old fried catfish and hush puppys baby it dont get no better than that. I got some beads too, the glass ones are the ones u want but ya gotta show somthing to get thoughs. hahah lol   iv been to Jackson MS too, i just love all of it down there ,so differnt down ther ,way slooower for sure i miss that pace of life for sure. we are gonna go threw La. and visit on our way back from the Jack Danials in oct. i cant wait looking forward to being there.Let me know if you want me to bring something back for you. where are you ? i think you said you were way south wilcox area? my mom and Dad live in Pearce AZ.  Yes katrina was devasting for La. i was in shock when that happened, i just couldnt belive it. They will rebuild it all thats just how La. peps are,very proud of were we come from.well i really enjoyed this conversation with you and hope to have many more on this subject azchoctaw. Do you have choctaw indian in you? my grandmother was choctaw indian. Looking forward to hearing from you again.  ;D

Speaking of Crawfish, where does anyone find these tasty little devils??  I used to catch them in a creek when I was kid, but am a little hesitant to try that now.  I have been jonsing for a crawfish boil for a while now.  I used to go to a place at 24th street and Camelback, but I don't know if they are even still there.  I am willing to get this fix any way I can, have someone else do the cooking or Me, it doesn't matter!!!
