Basha's had spares on sale a few weeks back, so I had two whole slabs which I trimmed STL style from the freezer. One slab was regular BBQ and I did char siu style on the other.
CHAR SIU MARINADE/SAUCE:
1/2 c sugar
1/2 c soy sauce
1 pressing of garlic
2 T Hoisin
1 T coarse sea salt
1/2 t five spice powder
1/8 t red food coloring
REGULAR BBQ:
Do your own method, you probably don't want my help ;D The Char Siu is on the bottom.

The skirts, briskets, and other excess meat was trimmed and put in the crock pot for 'carnitas'.
CROCK POT CARNITAS:
1 small onion, sliced
1 can Rotel tomatoes, drained
1 c beef broth
Put these in the bottom of the crock pot then add the pork pieces
1 t @ marjoram, oregano, cumin, and chile powder. S & P to taste. I cooked on high for six hours then shredded. Off to the fridge, I'll skim the fat off the top in the morning.

Pronounced 'Cha Su'.

"I'd buy that fer a dollar!" That looks really yummy! I have a 3 pack in the freezer...gotta try the char siu. Which means I have to buy some hoisin...aw. Maybe some duck sauce while i'm at it...

You can find already cooked Char Siu hanging in the deli section of the Ranch 99 Market South of the 202 on 44th Street. Dont be shy, just walk up to the counter and tell them you need 1lb (or whatever) of 'Cha Su' and watch them go to work chopping that bad boy up. Last time I was there I think it went for $6 or $7/lb.
Ironic that you posted this today Tracy. My kids all had a Char Siu Bao for their after school snack. :D

No, didnt make the buns. We buy the bao's frozen from Lee Lee market. We've made the buns before, and it's way too much work.

To be expected, something I wouldn't mind trying though.
Hats off to you though Crash, too many parents never introduce their children to anything but hot dogs and chicken nuggets :)

I tried this recipe for the char siu sauce. I added some Tobasco to give it a twang and it was outstanding.
