Ok recently did a pork shoulder done with a combination of Apple Mesquite oak and alder... all but the Mesquite were local harvested <Ok so I am a Norwester>
Rub: Brown sugar, Kosher salt<I like the irony> Hot hungarian paprika <Thanks to Market spice company for all my dried spices> Oregano, Dried Mustard, Coriander, cumin Chyanne and a couple other super secret thangs
Mopped it with a vinagar cumin combo with a couple addys
It was lucious... Appatsers included Brats and a wierd ass meatball thingy <ya gotta have variety>
Nothin like the bone falling out in your hand
Equipment: I'm poor I was running a Silver smoker... F@@K it the meat was good.
