I know many teams use manicure scissors (New I hope!) to trim off errant bits before boxing.

Looks like just bout everything was covered. One thing I will add though is on the brisket and the smoke ring. One word...OAK. For some reason oak really puts in a heavy smoke ring. might want to add that to yer arsenal for the first couple hours.
