Lots O Ribs...

So somehow I got suckered into smoking ribs for my company picnic.  I picked up 13 slabs Thursday and started cooking Friday and will finish up Saturday.

Here are a couple shots of the first batch that I did on Friday.  Since my smoker is small, I could only fit four and a half slabs at a time.  I think I need to get a couple rib racks.

Just did a dry rub on them and smoked for about 3-4 hours, then I put them in the oven for a bit to finish them off.  Mainly since I was limited on smoker space and had limited time to get them all cooked, otherwise I might have put them in foil and finished in the smoker.

Overall, I'm pleased with the outcome so far.  Hope the remainder will come out as well.

Right before putting them on the smoker.  I let them sit overnight with the rub on.

I haven't tried them yet, holding off till the picnic tomorrow, but they smell great.  Appear to be very tender as well.

I'll let you know how they tasted and what everyone thought of them after the picnic tomorrow.

WTF?! You cooked them beauties up and never tested for QA? Just let them sitting there smelling the place up?  You've got more self control than I do Mindblender thats for sure. Looks great, I've never sat my ribs with rub on all night, your rub must be low in salt I take it?

believe me, it was tough to not "sample" them :)

Here is a batch I did this afternoon as well as a fatty.

Neither lasted long.




Ribs in the botom picture are from a co-worker.  Had to compare them to mine :)
