I haven't been able to fire up the smoker lately; OTOH, I managed to get some restaurant rib eyes yesterday. I know someone who works at a restaurant that got 4 rib eyes dated the 19th, so I fired up the Weber with Lazzari Lump from RD...2 medium rare, 2 medium. I was unable to speak during the nearly religious experience. I will attempt to find out where the steaks originate, but they run $19.95 as a dinner at the restaurant. I'm guessing they were 6-8 oz. Amazing tenderness and taste. I'm sure due in no small part to the excellence of the cook!
Sorry they didn't last long enough to photograph...
One was dusted with Dizzy Pig Red Eye--that one was MINE!
Another was Red Eye on one side, DZPIG Cow Lick on the other.
I think the third was straight Cow Lick, and my wifey opted for straight salt and pepper...
The Red Eye/Cow Lick hybrid was really good, too. If you haven't tried Red Eye seasoning, you're missing out. It's coffee infused, and I always think it's got a bit of Eastern India spices going on too...Fantastic stuff--wonderful with beef!! I bet it'd rock on lamb, too.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
