Meatloaf!

Here's how I prepared my loaf:

2# 80-20 ground beef
1 onion
1/2 green bell pepper
2 cloves garlic
1 cup smashed saltines
2 eggs
3/4 cup Ketchup
1/4 cup milk

I mixed it up and pressed into rectangular tupperware container ~ 2in deep

I used my 18.5" WSM.  I used Kingsford charcoal with about 4 fist size chunks of apple wood.

I smoked at ~250 for three hours.  I added a light layer of BBQ sauce at 150 and pulled at 166.

I use a dual temp probe which I think gives me better temps at the food level.  BTW, I finally figured out that I can't trust the WSM gauge. 

It was really tasty!  Here are some photos.
