had some chicken laying around soooo

Sorry I didnt take any pics cause I had no idea it would turn out. I had some chicken breasts in the fridge. I was thinking what the hell can I cook that is different. So I chose between white chili and gumbo. So gumbo ended up being chosen. So cranked up the smoker and smoked 3 chicken breasts, pablano and a few red peppers. 180 for an hour. I used the traeger. So onto the rue. That was the trickiest part. Constantly stirring for 25 minutes. Fun. At one point I was thinking about scraping the whole thing. I was like, oh well, lets see how this turns out. Kinda a southwest twist with the beans and and corn. I hate okra. This turned out so good, I think I might enter it in the shrimp contest. Wow, it's very good. I served it with garlic bread. Here is what I used.


3 chicken breasts
1 lb jumbo shrimp
1 pablano pepper
3 red peppers
1 can corn
1 can black beans
2 celery stalks
1 large onion
1 clove garlic
2 cups tomato sauce
3 cups of chicken stock
1 cup white wine
2 TBL spoons of old bay
2 bay leaves
3 cups brown rice
1 cup eovoo. 3/4 cup flour for the rue
