Gator's first cook

 I got some seasoned oak and fired up the new pit. Greased her down with oil inside and out, and lit it up. Gas assist works great. Took about an hour for the pit to get to temp. Once it did, well...Ii guess I got lucky where I dropped the tuning plates. All four oven therms I put in there were reading the same along with the door therms. Only exception was the top of the upright was running about 25-30 degrees hotter (I know where to cook the chicken).
 Anyway the neighbor behind us (89 years old) has been camped out on her porch cutting crabapples from her tree an brought us over a jar of jelly she had just made. I used that for the glaze on 3 slabs of baby backs I threw on the pit after about 4 hours of seasoning along with some abt's.
 All turned out great. That pit is like driving a Cady.

 Lot's of labor, Thom...lots of labor. I cooked up some polish sausage last night and tonight I am going to cook up a chicken.

What polish sausage was leftover with the sauteed onions will be a omlet this morning.

Higgy, it is a backyad classic chef. Mine is 24" diameter main and upright. Added 4 extra trays for a total of 8 in the upright, as well as a hog hanger. I also had a gas assist log lighter in the firebox.  Gator's site is gatorpit.net
