Thanks Crash, I think I will do just fine on this beast.  Couple more runs and I think I will have it dialed in.  Also finally went to BBQ Island while I was out in that neck of the woods and picked up some things.  Only if I had more $$$.



My setup, trying to catch up with yall



first fatty, stuffed it with a creole crawfish mixture



all wrapped up and into the freezer to set



fineshed fatty, wasn't to happy with the look of it



it tasted better then it looked



some pulled pork



and some ribs.

Izzat offset a NBBD? Looks just like ChefRob's. I hadn't used my Brinkmann version for months before Saturday. She ran like a dream I was amazed. Maybe the reason I couldn't keep it below 300 at last use was due to the 105 ambient temp...or maybe I exercised a bit of restraint in loading it...
and that fatty looks just right, to me...I like my bacon cooked to 'brittle'.
