Firse Ever Brisket & Spare Ribs

A little down time so I thought I would share with all of you, today I'm doing my first brisket and spare ribs. A little work but not to bad if you start prepping as early as possable (which I did usually don't )to make the actual cooking day easy.  So far I have discovered judging at lot less work to enjoy good BBQ but there is a lot to be said for the passion and love of cooking BBQ so your friends and family can enjoy your master piece that judging just does not satisfy. Just check and wrapped my brisket looks great and smells good I hope it comes out just as tender.  I will post pic's when everything is done.  Happy Cuing.

What temp are you taking your brisket to? Packer of just the flat?

Packer, trying Myron's way at 350, just took it off the smoker smells great.  Will let it set for couple hrs then we will see how tender.

Everything is done, brisket came out tender and juicy although salty, others did not think so, next time use no salt rub or marinade. Ribs came out pretty good to, my CBJ wife thought the ribs were good, rest of my guest really liked them. I think they still need a little work, used by offset stick burner for the ribs that was real hard to keep the temps between 230-250. Had my brisket on my WSM should of put the ribs on it.  Thouhgt of using my offset at a comp until I could buy another smoker, after today don't think so.  Here are the pic's.
