I cooked a brisket & 2 butts for the 4th. And hamburgers/habanero burgers and brats. And DW/Tiara made potato salad. And beans. For 5 people. Uh...
So I have much brisket and pork still in the freezer, and I'm still eatin' on the leftovers. I ground up some brisket in the food processor to toss in one of our standard hamburger dishes. Pretty good. About 30% of the meat content was brisket. The flat of the brisket was a shade underdone, and the butts were a bit overdone, but it was all pretty tasty. I'm itching to get hold of another brisket!

The blob in the pan on the right is the fat trimmed off'n the brisket.

And I got new knives, too. Butcher & Chefs at Sam's. 2/$13. Sharp as hell!

Habanero visible.  Boys said they were as hot as the "Molten MOINK Balls". I said, "FEH!"

One of the pork butts. A friend brought lubricant. I haven't had Heinie in quite a while. But that's another story.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
