I usually buy my briskets at wally world because they never separate the choice from the select. Went to do some grocery shopping at our local super market and did a quick glance at the briskets there. $2.18/lbs for packers. I noticed a blue label brisket and it was/is a choice CAB brisket all by itself. A small one at that, only 9 1/2 lbs which means from a younger animal. It has fantastic marbling on. I trimmed it up and sprinkled on the rub at 9 am this morning. It is 138 degrees right now at 1:30. I am going to wrap it a little early, and give it a little more braise time, probably at 150 since it is a smaller brisket. No reason behind the wrapping early other than it is a small brisket, and with the marbling, my gut tells me to wrap early.  I cant wait for dinner time

Choice at $2.18 is a steal!  I hope the cook goes well.

On a side note, how's the trailer coming along?

It sounds really good. I am looking for some new pictures. I like a choice for $2.18/lbs is really cheap than other prices. I love to look pictures of it.

I guess I am bad about not getting pics. The brisket turned out great. Between four of us, only about 1 1/2 lbs of brisket were leftover.
