Pork Butt on my new ProQ Excel 20

Just made this last weekend for my first time...

Roast Size: 6.47lbs
Cook Time: 8+ hours
Result: Priceless :) I was very happy with the way it turned out... Glad my coals stayed hot the whole time. This ProQ is a beast and needs quite a bit of fuel but it hung in there right about 225 +/- the whole time. One thing I did that may be a little off was that I only used one stacker and the PB cooked right above the water pan. It still cooked great and had that nice smokey flavor. Not bad for my first time...

I dont think that's "off" at all Chris.  No reason to use two stackers when only one has meat on it.

We have used two stackers a few times with meat on only one grate.  That was mainly just to get a feel for how the Pro Q worked with two stackers though.
