Billowing white smoke and grease fire

Well, I royally screwed up a rack of ribs Wednesday before I went off into the deep freeze. I had a hard time keeping the white billowing at bay, even though I was pre burning the wood. Then, it looks like the firebox is a bit lower than the drain end of my horiz offset. The grease pooled by the firebox opening, and WHOMP, Fourth of July. Creosote tastes really bad, and then it affects one's exhaust system very badly too. I thought I was a goner! What an objectionable scent that produced!!
My problems seemed to be caused by the pecan wood, I thought. Either I'll stick to apple from now on, or I need a fire pit to REALLY get it going very well.

Creosote bad, thin blue good.

Trust me, there's nothing wrong with using pecan.  Next time try using a smaller amount of wood and place it close enough to the fire to smolder but not directly on the coals.  You should get plenty of smoke that way but in a much more controlled fashion.

It depends on where you are at in Az. Some areas have cleaner air then others. Down here in the south it is better then the middle. hehe

Wait!! I figgered it out!! Pecan pieces too big! I need a chain saw! That's it--find a hobby that requires you to "fuel" another of your hobbies...need to buy more tools to properly BBQ. It's all so clear. Like Buddha at Burger King; Make me one with everything!

Get the chain saw cheap at walmart...If you get a UDS built you will want a way to cut the wood up...anything much larger than 1/2 a fist sized chunk is too large, IMHO, for the UDS...
