Beef ribs..

I've been wanting to try beef ribs for quite a while...I bought some from Fry's the other day..I didn't buy the "short ribs", but rather the ones labelled "Beef Spare Ribs". They weren't too impressive looking, but then again, they didn't look horrible.


Until I got done with them..An unqualified disaster! YAY!


I'll add the before and after pictures later on today.

Mistake #1...a wine based marinade.


The ProQ 20 performed flawlessly, climbing slowly to 230, whereupon I opened the intakes slightly. The temps climbed to about 250-260 and parked. One chunk of either pecan or oak, which I let get fully involved before I closed up the smoker. Beautiful TBS*.  And smelled wonderful..
There was basically no meat on these stupid bones, and somebody got careless with the salt...Past jerky saltiness.
Three hours was way too much time for these things...Guess I'd better get a chuck roast, and try again!
