Canned Smoked Pork Butt

We really like canned pork, makes some tastey an easy meals, so I wanted to try somethin a bit different. I smoked a butt yesterday an pulled it at 170

WTF?  Ok, this could make a sow eat her pigs!

Pulled it at 170 an let it cool, then inta the fridge over night.  Cubed it inta bout 1/2 inch ta 3/4 inch cubes an put in pint jars. 

Canned em in the pressure canner an this is what we got.

Smells really good.  We shall see what we got next weekend. 

I'll post the step by step on our blog site fer those who are interested.

OK, it makes sense now. I thought you were smoking some kind of canned pork. Didn't make sense, you being in Iowa. Sometimes it takes a brick bat dropping on my head.  :lamp:
