200 lbs of port butts in one shot. 40lbs of mesquite charcoal, 20 mesquite logs. Time to smoke: 13 hours. Time to Pull: 1 hour. Time to eat: 500 people in 1.5 hours. Sure seems like alot of work to disapear in soo short amount of time. :-)

OK, I have to ask. To me, that seems like a lot of Mesquite. It might just be me, but a little mesquite goes a long way. I have used the Mesquite lump form Costco Business and it was a little too much for my. Now it coul be my cooker, as the Stump's is pretty airtight and your can over smoke quickly.
What type of cooker are you using and how was the smoke flavor?? Subtle, pronounce,??? It sounds like it was enjoyed by all, so it must have been good.
The most I can fit is 10 big or 12 med butts at a time. I still have to rotate, as the bottom is a little hotter than the top. I am lazy, so I just pull the bottom ones early, wrap and into the Cambro until the others finish.

Dave, did you know that Roger Wagner uses only mesquite at his restaurant? You would think that the meat would be overpowered but he uses a very light touch and the taste is excellent.

I guess it is just how I used it and I since have been using other woods.

I use mesquite lump now and then but usually fully lit if I plan to smoke with it or in very limited amounts and mixed with other charcoal if using the Minion Method.
Powerful stuff, that lump, powerful.
