I've been using a chunk of mesquite, but it ain't workin' for me below the grate anymore. I need something under the grate that it won't fall out of...maybe I'll just clamp it with a clothespin...

A potato unless you're using apple wood, then just us a piece of apple. ;D ;D

i just have a charbroil offset I bought at home depot. I did a reverse draft modification to it. It works for what I do. I am going to build a larger unit this summer with a compilation of features I have seen on some expensive units.

I copied your Portobellos then printed it out..
Did not taste like I thought it woud.. Most like paper.

I guess I will have to fire up this week end "cook" some for myself.
