Got this from Hobe Meat(16th street and Bethany home) great place lots of selection very friendly staff. All the meat from this butchers come from one place in no hormones and all prime beef is aged in house 30 days. I had a $25 groupon for $50 of prime beef, got a 9 oz filet. a 15 oz ribeye, and a 17 oz new york strip. ( also walked away with half pound of apple wood smoked bacon, some of the best bacon I have every had was from this place, and also a 1 pound 1.5 inch thick butterfly pork chop....

Here is the picture of the ribeye weighing in at just under 15oz at 1.75 inches thick. I covered it with ground pepper then covered it in oil.

Pre-Stage : Take out of Refrigerator for 1 hour and a half to reach room temperature.
Stage one : High heat 3 min, turn 90 deg 3min--flip repeat
Stage two : Low heat side of grill ( indirect ) closed lid and keep temp at around 350 for 10 min.

Stage three : Take off grill at 145 ( cover in foil and take back to apartment) Let rest 8 min.

once on plate and cut into 2 pieces( had to share with the fiance ) not one speck of juice on my plate all was absorbed back into the steak ( thanks to the resting period) and it was delicious. And No... I didnt use any sauce with it lol.

Not too shabby for the grills they give us here at my apartment complex.

Oh, that looks good...I've been putting Dizzy Pig's Red Eye Express on my steaks lately, and it is amazing! Really adds something to the steak flavor!

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
