 :lamp: To make the ABT's even better my wife has come up with a jalapeno mayonnaise. All you need is a food processor, mayonnaise, and pickled jalapenos. No set measurements just keep adding the jalapenos to suit your taste. You talking about a wicked bologna sandwich with it. I'm thinking of smoking some bologna just for sandwiches. Let me know what you think if you try it.

Sounds tasty! I like the idea of jalapeno mayo in general, but most ABT's are already pretty darn spicy. If you weren't looking to add fuel to the fire, something like a mango chutney might provide a pleasingly sweet contrast in which to dip.

GOSM big block, Weber 22.5 in one touch, AMZN cold smoker. I Grow NM Heritage 6-4, NM Jalmundo, NM Vaquero, Poblano,Serrano Tampiqueno. Habaneros are Orange, Antilla, Bondo Ma Jacque, and Red Savina. I use mesquite, cherry, apple, alder, and red oak chunks.
